Because a good pumpkin and sweet potato soup is perfect for a meal. Accompanied by a good toast or a puff crown and you get a full meal.

My velouté is vegan, healthy and full of vitamins.

In addition, I used my cookeo to make my recipe even faster.

The finishing touch of coconut milk, brings a little exotic side; but you can replace it with crème fraîche.

Ingrédients:

  • pumpkin
  • 2 sweet potatoes
  • 1 oignon
  • 1 degermed garlic clove
  • 20cl de lait de coco

Préparation:

  • Remove the peel and cut the pumpkin into pieces which you place in the tank.
  • Peel and cut the sweet potatoes which you add to the bowl.
  • Add the peeled onion and cut as well as the garlic clove.
  • Cover with water up to the level of the vegetables.
  • Start the cookeo in “pressure” mode for 20 minutes.
  • After releasing the pressure, mix the vegetables.
  • Add the coconut milk, du sel et du poivre.
