Serves: 6 personnes
Ingredients
  • 4 blancs d’œuf
  • 100g de sucre en poudre
  • 100g de poudre d’amande
  • 1 tablette de chocolat
  • 25cl de crème liquide
Instructions
  1. Fouetter les blancs d’œufs avec un robot; dès qu’ils commencent à mousser verser progressivement le sucre en poudre afin d’avoir des blancs en neige.
  2. Gradually add the almond powder and mix very gently with a spatula.
  3. Pour the dough on a baking sheet covered with baking paper and spread evenly.
  4. Enfourner pendant 15 minutes à 180°C.
  5. Let cool completely right out of the oven.
  6. Whipped ganache:
  7. Break the chocolate into pieces.
  8. Heat the liquid cream and pour it over the chocolate.
  9. Leave aside for 5 minutes.
  10. Mix the chocolate / cream duo to have a smooth and shiny cream.
  11. Place in the fridge for at least 1 heure.
  12. Whisk your ganache so that it is smooth.
  13. Montage:
  14. Cut 2 squares in your dacquoise:
  15. Place the 1st square on a serving dish.
  16. Poach your mounted ganache.
  17. Place your 2nd square of dacquoise on the ganache.
  18. Sprinkle with icing sugar if you wish.
  19. Place in the fridge until ready to serve.
