A delicious summer and tropical lemon coconut mousse.
La chaleur du moment m’éloigne de mon four et je privilégie les recettes sans cuissons ou vraiment avec un minimum .
J’ai déjà utilisé du lait de coco pour réaliser des crèmes ou des gâteaux mais la mousse n’était pas testée .
Pas déçue du résultat , la mousse garde vraiment le bon gout de la noix de coco et ce petit gout acidulé du citron est parfaite !
C’est le dessert de l’été , une gourmandise idéale pour se rafraichir .
L’idée de mixer la noix de coco avec du lait de coco m’est venue en naviguant sut différents sites végan et j’ai trouvée l’idée pas mal .

Lemon coconut mousse

150g coconut milk 70g de noix de coco râpé 40g cane sugar 1 citron vert 125g de mascarpone 20cl de crème liquide In the bowl of a blender pour the coconut milk, grated coconut, lemon juice and cane sugar. Mix until you obtain a smooth puree. Mix the coconut puree obtained with the mascarpone. Whip the liquid cream and add delicately to the previous preparation. Fill containers, grate the zest of a lemon on the surface and place in the fridge. Take them out of the refrigerator when serving because this dessert is eaten fresh.
