No-bake lime cheesecake

Immerse your spoon in a light and delicious lime cheesecake without baking.

Depuis que j’ai découvert et déguster le cheesecake, je ne me lasse plus de tester différentes recettes.

J’ai une préférence très nette pour le cheesecake sans cuisson, je le trouve léger, goûteux et de plus très facile à préparer. D’ailleurs le dernier que j’ai réaliser a fait fureur auprès de mes enfants, le cheesecake chocolate cookies. 🙂

Pour cette recette j’ai préparer un curd de citron vert express que j’ai intégrer à une crème fouetter; ça a permis à la saveur citron d’être bien présente et douce.

Avec ma recette de cheesecake citron vert sans cuisson je participe à la Foodista Challenge #62 dont je suis très fière d’être la marraine pour cette édition.

No-bake lime cheesecake

Serves: 35 minutes
Ingredients
  • 1 packet of petit-beurre biscuits
  • 40g de beurre fondu
  • 3 citron vert
  • 100g de sucre en poudre
  • 1 cuillère à café de maïzena
  • 100 de fromage frais (type St Môret)
  • 20cl de crème liquide
  • 1 tablespoon of icing sugar
Instructions
  1. Zest the green lemons and reserve them.
  2. Press lemons juice, that you then mix with a powdered sugar as well as the cornstarch.
  3. Heat until the mixture thickens. Laisser refroidir.
  4. Reduce crumb cookies using a blender.
  5. Mix your crushed cookies with the melted butter and mix everything.
  6. Divide this mixture in ramekins and tamp.
  7. Mix the liquid cream with the icing sugar and go up in whipped cream.
  8. Mix the lemon cream with the fresh cheese.
  9. Add the whipped cream and mix gently with a spatula.
  10. Divide this preparation in your ramekins.
  11. Decorate lemon zest.
  12. Minimum 1 time before tasting.
  13. Mount the liquid cream in C
